
Sweet potato fries are my go-to “it’s been a long day” meal. I know, they’re supposed to be a side for something, but these are so incredible, I let them take center stage. It took me years to discover sweet potato fries, as my only encounters with them were restricted to Thanksgiving, when they were mashed and topped with marshmallows. I still avoid that dish, but I’ve begun to discover more sweet potatoes (there’s a variety, from orange to white) and the subtle differences in their flavors. You can pair them with ketchup or a aioli-garlic dressing, but I recommend just a bit of extra salt. Enjoy their taste uninterrupted.
Sweet Potato Fries
sweet potatoes (as many as you’d like)
olive oil
kosher salt
Preheat oven to 400 degrees F and prepare a cookies sheet, covered with tin foil. Chop ends off of sweet potatoes, then chop into strips, like fries. Move to cookie sheet and pour olive oil on top. Mix fries around to coat thoroughly. Top with salt and bake for about 20-30 minutes, until the fries begin to brown slightly. If you want crispier fries, turn the oven on broil for the last 1-3 minutes. Top with more salt and enjoy!
